Ingredients

Scale
  • 20 ounces cheese tortellini (fresh or frozen)
  • 1 pound thinly sliced steak (ribeye or sirloin)
  • 1 medium onion, thinly sliced
  • 1 medium green bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 cup shredded provolone cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Cook tortellini according to package directions, drain, and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add thinly sliced steak and cook until browned. Remove and set aside.
  3. Melt butter in the same skillet over medium heat. Add onion and bell pepper, cooking until softened (about 5-7 minutes). Add garlic and cook for another minute.
  4. Sprinkle flour over the vegetables, stir, and cook for 1 minute.
  5. Gradually whisk in beef broth and bring to a simmer, cooking until slightly thickened (about 3-5 minutes).
  6. Stir in heavy cream, provolone cheese, and mozzarella cheese, stirring until melted and smooth.
  7. Return the cooked steak and tortellini to the skillet, tossing to coat in the creamy sauce.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh parsley and serve immediately.

Notes

For best results, use fresh tortellini and high-quality steak. Adjust seasoning to your taste and feel free to add mushrooms or red pepper flakes for extra flavor.
