Crockpot Loaded Steak and Potato Bake

A flavorful and easy-to-make Crockpot Loaded Steak and Potato Bake that combines tender steak, hearty potatoes, and a creamy, cheesy topping for a comforting meal.

  • 1 pound beef sirloin, sliced thinly against the grain
  • 3 large russet potatoes, peeled and cubed into 1-inch pieces
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions (optional garnish)
  • Optional toppings: crumbled bacon, diced tomatoes, or fresh parsley

Instructions

  1. Grease the crockpot lightly with nonstick spray.
  2. Add the cubed potatoes to the bottom of the crockpot.
  3. Layer the sliced beef sirloin over the potatoes and season with salt, pepper, thyme, and paprika.
  4. Pour in the beef broth and Worcestershire sauce, then stir in the minced garlic.
  5. Cover and cook on low for 6–8 hours or high for 3–4 hours.
  6. In a small bowl, mix sour cream with a splash of beef broth until smooth.
  7. Once cooking is complete, stir the mixture gently, then spread the sour cream over the top.
  8. Sprinkle shredded cheddar cheese on top, cover, and let sit for 10–15 minutes until melted.
  9. Garnish with chopped green onions or optional toppings, then serve hot.

Notes

For extra richness, add cooked and crumbled bacon before serving. You can also use Monterey Jack or Pepper Jack cheese for a different flavor twist.
