  • 4 boneless, skinless chicken breasts (68 oz each)
  • 1/2 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat chicken breasts dry and pound to an even 1/2-inch thickness.
  2. Set up three shallow dishes: one with flour, one with beaten eggs, and one with Parmesan, Italian seasoning, garlic powder, salt, and pepper.
  3. Dredge each chicken breast in flour, dip in eggs, then coat with the Parmesan mixture.
  4. Heat olive oil in a large skillet over medium heat. Cook chicken for 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F/74°C). Set aside.
  5. In the same skillet, melt butter, then sauté garlic for 1-2 minutes.
  6. Add chicken broth and bring to a simmer, scraping up browned bits.
  7. Stir in heavy cream and simmer for 2-3 minutes until slightly thickened.
  8. Return chicken to the skillet, spoon sauce over, and garnish with fresh parsley.
  9. Serve immediately with pasta, mashed potatoes, or vegetables.
