  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) package frozen spinach, thawed and squeezed dry
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Cook tortellini according to package directions. Drain and set aside.
  2. While tortellini is cooking, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
  3. Stir in diced tomatoes and spinach. Cook until heated through, about 3 minutes.
