  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 can (10.75 oz) cream of chicken soup
  • 1/2 cup full-fat sour cream
  • 3 cups cooked rice (long-grain, basmati, or jasmine)
  • 1 cup shredded sharp cheddar cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Optional: 1 cup frozen mixed vegetables (peas, carrots, corn)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken with salt and black pepper.
  3. Heat olive oil in a large oven-safe skillet and sear chicken for 3-4 minutes per side until golden brown.
  4. Remove chicken and set aside.
  5. In the same skillet, sauté onion until translucent, then add garlic and cook for 1 more minute.
  6. Pour in chicken broth, deglaze the pan, and stir in cream of chicken soup, sour cream, thyme, and parsley.
  7. Spread cooked rice evenly in a 9×13-inch baking dish.
  8. If using, sprinkle mixed vegetables over the rice.
  9. Place seared chicken on top and pour the creamy sauce over everything.
  10. Cover with foil and bake for 25 minutes.
  11. Remove foil, sprinkle shredded cheese over the top, and bake uncovered for an additional 5-10 minutes until melted and bubbly.
  12. Let rest before serving. Garnish with fresh parsley if desired.
