This Creamy Lemon Garlic Chicken with Rice is a flavorful and easy weeknight meal. Tender chicken breasts are cooked in a luscious lemon garlic sauce and served over fluffy rice for a comforting and satisfying dish.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cooked rice, for serving
  • Fresh parsley, chopped, for garnish

Instructions

  1. Season chicken breasts with salt, pepper, and dried thyme.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. In the same skillet, add minced garlic and cook for 1 minute, or until fragrant.
  4. Pour in chicken broth and lemon juice. Bring to a simmer and cook for 2-3 minutes, or until slightly reduced.
  5. Stir in heavy cream and lemon zest. Reduce heat to low and simmer for 2-3 minutes, or until the sauce has thickened slightly.
  6. Return chicken breasts to the skillet and coat with the sauce.
  7. Serve immediately over cooked rice. Garnish with fresh parsley.

Notes

For an extra layer of flavor, add a pinch of red pepper flakes to the sauce.
