1 pound bowtie pasta
1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
4 cloves garlic, minced
1/2 cup chicken broth
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
2 tablespoons lemon juice
1 teaspoon lemon zest
1/4 cup chopped fresh parsley
Salt and black pepper to taste
Instructions
Cook the bowtie pasta according to package directions. Drain and set aside.
While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper.
Add the minced garlic to the skillet and cook for 1 minute more, until fragrant.
Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
Stir in the heavy cream, Parmesan cheese, lemon juice, and lemon zest. Reduce heat to low and simmer for 2-3 minutes, until the sauce has thickened slightly.
Add the cooked pasta and parsley to the skillet and toss to coat.
Season with additional salt and pepper to taste.
Serve immediately, garnished with extra Parmesan cheese and parsley, if desired.
Notes
For a spicier dish, add a pinch of red pepper flakes to the sauce.
