  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup sour cream
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Egg noodles, for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned on all sides. Season with salt and pepper. Remove chicken from skillet and set aside.
  3. Add onion and mushrooms to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Stir in flour and cook for 1 minute. Gradually whisk in chicken broth until smooth.
  5. Bring to a simmer and cook until sauce has thickened, about 5 minutes.
  6. Stir in sour cream and parsley. Season with salt and pepper to taste.
  7. Return chicken to the skillet and heat through. Serve over egg noodles.

Notes

For a richer flavor, use heavy cream instead of sour cream. You can also add a splash of white wine to the sauce for extra depth.
