Creamy Chicken Mushroom Stroganoff on a Plate

This Quick Creamy Chicken Stroganoff is the perfect weeknight meal! It’s easy to make and so comforting. Ready in under 30 minutes!

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 8 ounces sliced mushrooms
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1 1/2 cups chicken broth
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 8 ounces egg noodles, cooked according to package directions

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  2. Add mushrooms and onion to the skillet and cook until softened. Add garlic and cook for 1 minute more.
  3. Stir in flour until smooth. Gradually whisk in chicken broth until smooth. Bring to a simmer and cook until thickened, about 5 minutes.
  4. Stir in sour cream and parsley. Season with salt and pepper to taste.
  5. Add chicken back to the skillet and heat through.
  6. Serve over cooked egg noodles.
  7. Enjoy!

Notes

Serve with a side salad for a complete meal. You can substitute beef broth for chicken broth.
