Creamy Cajun Linguine: A Taste of Louisiana in Your Kitchen

  • 1 pound linguine
  • 1 tablespoon olive oil
  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Cook linguine according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned. Add bell peppers and onion and cook until softened. Add garlic, Cajun seasoning, salt, and pepper and cook for 1 minute more.
  3. Stir in heavy cream and Parmesan cheese. Bring to a simmer and cook until sauce has thickened slightly. Add linguine to the skillet and toss to coat. Garnish with parsley and serve.

Notes

For a spicier dish, add a pinch of cayenne pepper to the Cajun seasoning. You can also use shrimp or sausage instead of chicken. Serve with a side of garlic bread for a complete meal.
