  • 3 tablespoons creamy peanut butter
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: 1 tablespoon cocoa powder or chocolate chips

Instructions

  1. Place cottage cheese, peanut butter, honey, vanilla extract, and salt into a blender or food processor.
  2. Blend on high speed until the mixture is smooth and creamy, scraping down the sides as needed.
  3. If desired, add cocoa powder or chocolate chips and blend briefly to combine.
  4. Transfer the mousse to serving bowls or glasses.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
  6. Serve topped with extra peanut butter, nuts, or fresh fruit if preferred.

Notes

For a lighter version, try using natural peanut butter and low-fat or non-fat cottage cheese. You can also add a sprinkle of cinnamon for extra flavor.
