  • 1 whole wheat flatbread
  • 1/2 cup low-fat cottage cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup spinach leaves
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix cottage cheese with minced garlic, oregano, salt, and pepper.
  3. Place the flatbread on a baking sheet and brush olive oil lightly over the surface.
  4. Spread the cottage cheese mixture evenly on the flatbread.
  5. Top with shredded mozzarella, cherry tomatoes, and spinach leaves.
  6. Bake in the oven for 10-12 minutes or until the cheese is melted and the edges are crispy.
  7. Remove from oven, slice, and serve warm.
