Cottage Cheese and Herb Biscuits

Fluffy cottage cheese and herb biscuits made with fresh herbs offer a savory, tender treat perfect for breakfast or as a side dish.

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1 cup cottage cheese
  • 1/2 cup milk
  • 2 tablespoons fresh chopped parsley
  • 1 tablespoon fresh chopped chives
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. In a separate bowl, mix the cottage cheese, milk, and fresh herbs until combined.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  6. Turn the dough out onto a floured surface and gently pat it into a 1-inch thick rectangle.
  7. Use a biscuit cutter to cut out biscuits and place them on the prepared baking sheet.
  8. Bake for 12-15 minutes until golden brown on top.
  9. Remove from oven and let cool slightly before serving.

Notes

Serve warm with butter or your favorite jam. For a cheesy twist, add 1/2 cup shredded cheddar to the dough.
