  • 8 oz penne or pasta of choice
  • 1 tablespoon olive oil
  • 4 chicken sausages, sliced
  • 2 cloves garlic, minced
  • 1 medium zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil, chopped (for garnish)

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced chicken sausages and cook until browned, about 5 minutes.
  3. Add garlic and sauté for 1 minute until fragrant.
  4. Add zucchini and cherry tomatoes. Cook for 5–6 minutes until tender.
  5. Season with salt, pepper, and red pepper flakes if using.
  6. Add cooked pasta to the skillet and toss everything together.
  7. Sprinkle with Parmesan and garnish with fresh basil before serving.

Notes

Use whole wheat or gluten-free pasta if desired. Add spinach or bell peppers for extra veggies.
