This Easy Chicken Fajita Pizza combines the flavors of chicken fajitas with the fun of pizza. A quick and delicious meal perfect for busy weeknights!

  • 1 lb boneless, skinless chicken breasts, cut into strips
  • 1 tbsp olive oil
  • 1 packet fajita seasoning
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 1 pre-made pizza crust
  • 1 cup shredded Mexican cheese blend
  • 1/2 cup salsa
  • Optional toppings: sour cream, guacamole, cilantro

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken strips and fajita seasoning. Cook until chicken is cooked through, about 5-7 minutes.
  3. Add sliced bell peppers and onion to the skillet. Cook until softened, about 5 minutes.
  4. Spread salsa evenly over the pizza crust.
  5. Top with the chicken and vegetable mixture.
  6. Sprinkle with shredded Mexican cheese.
  7. Bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  8. Let cool slightly before slicing and serving. Top with optional toppings as desired.

Notes

For extra flavor, marinate the chicken in the fajita seasoning for at least 30 minutes before cooking. Serve with a dollop of sour cream and fresh cilantro.
