This Cheesy Rotel Ranch Queso is a creamy, flavorful dip featuring melted cheese, zesty Rotel tomatoes, and a hint of ranch seasoning, perfect for parties or snacking.

  • 1 can (10 oz) Rotel diced tomatoes and green chilies, drained
  • 1 package (1 oz) ranch seasoning mix
  • 8 oz cream cheese, softened
  • 1/2 cup milk
  • 1 tablespoon butter
  • Optional: chopped fresh cilantro for garnish

Instructions

  1. In a medium skillet over medium heat, melt the butter.
  2. Add the cream cheese and milk, stirring until smooth and creamy.
  3. Stir in the ranch seasoning mix until evenly combined.
  4. Mix in the shredded cheddar cheese gradually, stirring constantly until fully melted.
  5. Add the drained Rotel tomatoes and green chilies, stirring to combine well.
  6. Cook for 2-3 more minutes until the queso is heated through.
  7. Remove from heat and garnish with chopped cilantro if desired.
  8. Serve warm with tortilla chips or fresh veggies.

Notes

For extra heat, add a pinch of cayenne pepper or serve with spicy salsa on the side.
