Cajun Chicken Sloppy Joes

Fast, flavorful, and made mostly in one skillet, this bold twist on a classic sloppy joe is guaranteed to shake up your dinner routine in the best way.

  • 1 tbsp Olive Oil or Vegetable Oil
  • 1 lb Ground Chicken
  • 1 medium Yellow Onion, finely diced
  • 1 Green Bell Pepper, finely diced
  • 23 cloves Garlic, minced
  • 23 tbsp Cajun Seasoning
  • 1 (8 oz) can Tomato Sauce
  • 2 tbsp Tomato Paste
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Brown Sugar or Maple Syrup
  • 1 tbsp Apple Cider Vinegar or White Vinegar
  • ½ cup Chicken Broth or Water
  • Salt and Black Pepper to taste
  • 46 Hamburger Buns
  • (Optional) Butter for toasting buns
  • (Optional) Chopped Fresh Parsley or Green Onions, for garnish

Instructions

  1. Prep onion, bell pepper, and garlic. Set aside.
  2. In a skillet, heat oil over medium-high. Add ground chicken and cook until no longer pink and lightly browned (5-7 mins). Drain excess fat if needed.
  3. Push chicken aside or remove temporarily. Add onion and bell pepper, sauté 5-7 mins until soft. Add garlic and cook 1 min.
  4. Return chicken to skillet. Stir in Cajun seasoning and cook 1-2 mins.
  5. Add tomato sauce, tomato paste, Worcestershire, brown sugar, and vinegar. Mix well.
  6. Stir in broth or water. Bring to a simmer, scraping up any browned bits.
  7. Reduce heat to low, cover loosely, and simmer 10-15 mins (or up to 30) until thickened. Stir occasionally.
  8. Taste and adjust seasoning with salt, pepper, sugar, or vinegar if needed.
  9. Toast buns if desired. Spoon hot sloppy joe mixture onto bottoms, garnish, and serve with top buns.

Notes

Adjust heat level by using more or less Cajun seasoning. Ground turkey or beef work as substitutes. Sauce can be made ahead and leftovers store well. For gluten-free, use certified GF buns and ingredients.
