  • 4 boneless, skinless chicken breasts
  • 1 cup fresh blueberries
  • 2 teaspoons fresh thyme leaves
  • 2 tablespoons olive oil
  • 1/4 cup chicken broth
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 tablespoon butter

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken breasts and cook for 5-6 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  4. Reduce heat to medium and add minced garlic to the skillet; sauté for 1 minute until fragrant.
  5. Add blueberries, chicken broth, balsamic vinegar, and thyme leaves to the skillet. Cook for 3-4 minutes, stirring occasionally, until the blueberries start to soften and sauce thickens slightly.
  6. Stir in butter until melted and sauce is glossy.
  7. Return the chicken breasts to the skillet, spoon the blueberry-thyme sauce over them, and cook for an additional 2 minutes to heat through.
  8. Serve the chicken topped with the sauce and garnish with extra thyme if desired.

Notes

For extra flavor, serve this dish with a side of creamy mashed potatoes or a fresh green salad. You can also substitute fresh thyme with rosemary for a different herbal note.
