  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup packed brown sugar
  • 2 large eggs
  • ½ cup unsalted butter, softened

  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts
  • ½ cup buttermilk
  • 8 ounces cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 23 tablespoons heavy cream

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Cream butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, mash bananas until smooth.
  5. Whisk together flour, baking soda, baking powder, and salt.
  6. Gradually add dry ingredients to wet ingredients, alternating with buttermilk.
  7. Fold in chopped walnuts.
  8. Pour batter into prepared pan and bake for 30-35 minutes.
  9. Let cake cool completely before frosting.
  10. For frosting, beat cream cheese and butter until smooth.
  11. Gradually add powdered sugar, then mix in vanilla extract.
  12. Add heavy cream one tablespoon at a time until desired consistency is reached.
  13. Frost cooled cake and garnish with extra walnuts if desired.
  14. Slice and serve!

Notes

For best results, use very ripe bananas. Toasting walnuts before adding them enhances their flavor.
