  • 4 boneless, skinless chicken breasts
  • 1.5 lbs Yukon Gold potatoes, cubed
  • 1/4 cup olive oil
  • 1 packet (1 ounce) ranch seasoning mix
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, toss the cubed potatoes with 2 tablespoons of olive oil, garlic powder, and black pepper. Spread them in a single layer on the prepared baking sheet.
  3. In a separate bowl, drizzle the chicken breasts with the remaining 2 tablespoons of olive oil. Sprinkle the ranch seasoning mix and Parmesan cheese evenly over the chicken, pressing lightly to adhere.
  4. Arrange the chicken breasts on the baking sheet with the potatoes.
  5. Bake for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender and slightly golden. Chicken internal temp should reach 165°F.
  6. Garnish with fresh parsley before serving.

Notes

For extra flavor, add a squeeze of lemon juice over the chicken and potatoes after baking. You can also substitute sweet potatoes for Yukon Gold potatoes.
