Authentic Italian Tomato Pie on Display

This simple, rustic Italian tomato pie is bursting with fresh tomato flavor and is perfect for a light lunch or appetizer.

Ingredients

  • 1 lb ripe tomatoes, sliced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1 clove garlic, minced
  • 1/4 cup chopped fresh basil
  • Salt and pepper to taste
  • 1 prepared pie crust

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place pie crust in a pie dish.
  3. Arrange tomato slices in the crust.
  4. In a bowl, combine Parmesan cheese, olive oil, garlic, and basil. Season with salt and pepper.
  5. Pour mixture over the tomatoes.
  6. Bake for 30-40 minutes, or until crust is golden brown and tomatoes are tender.
  7. Let cool slightly before serving.

Notes

For a richer flavor, use sun-dried tomatoes. Add a pinch of red pepper flakes for a little heat.
