  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup fresh pineapple chunks
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp cornstarch
  • 1 tbsp sesame oil
  • 1/4 tsp red pepper flakes (optional)
  • Sesame seeds and chopped green onions for garnish (optional)

Instructions

  1. In a medium bowl, whisk together soy sauce, honey, garlic, ginger, cornstarch, sesame oil, and red pepper flakes (if using).
  2. Add chicken cubes and pineapple chunks to the marinade. Toss to coat evenly.
  3. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  4. Preheat your air fryer to 380°F (190°C).
  5. Place the marinated chicken and pineapple in the air fryer basket in a single layer, ensuring not to overcrowd. You may need to cook in batches.
  6. Air fry for 12-15 minutes, flipping halfway through, or until chicken is cooked through and golden brown.
  7. Garnish with sesame seeds and chopped green onions, if desired.
  8. Serve immediately over rice or with your favorite side dishes.

Notes

Serve over white rice or cauliflower rice and add some steamed broccoli for a complete meal.
